It was one of the hottest days of the summer, and I was looking forward to sitting under the AC and having an iced drink after my church service in the Chelsea neighborhood. But when I walked into the shop, I found out the AC was out! No iced coffee for me that day. Instead, I picked up a couple of different coffee beans to try at home.

One of the packs was Layo Teraga from one of New York's coffee roasters, St Kilda Coffee, which I’m really excited to talk about today. St Kilda Coffee in New York draws inspiration from Australian coffee culture. The name “St Kilda” references a well-known suburb in Melbourne, Australia, famous for its vibrant coffee scene. This influence is evident in their approach to coffee, which often emphasizes high-quality, artisanal roasting and a focus on unique flavor profiles, similar to the specialty coffee trends popular in Australia. What I really liked about the Chelsea location is the barista, Alexa. She’s super nice and always greets customers with a bright smile, making every visit a pleasant experience.

When I first opened the Layo Teraga pack, the aroma was striking—a mix of rum and a subtle fruitiness that reminded me of olives. It was a unique and intriguing scent. Brewed up, this coffee tastes like rum with a hint of olives. It’s a bit unconventional, but in a good way. The flavor is smooth and tea-like, making it a great choice for your morning brew.

It’s not a strong coffee, so if you’re looking for something with a mild, spiked scent and a tea-like quality, Layo Teraga might just become your new favorite.
