There are mornings when I crave a strong, robust coffee after a long night of work and late hours. But then, there are those other mornings when I find myself drawn to a coffee that's more like tea—bright, delicate, and adorned with subtle floral and leaf-like notes.

For those days, Kurasu’s El Salvador Ever Diaz is the perfect choice. This semi-washed Pacamara, grown in the high-altitude regions of Finca Mileydi, Charatenango, and El Tunel at altitudes between 1300-1400 meters, offers a taste experience that beautifully mirrors the sophistication of premium teas.

What truly sets Ever Diaz apart is its long, lingering aftertaste, which subtly evokes the delicate qualities of Darjeeling tea. Known as the "Champagne of Teas," Darjeeling offers a unique blend of fruity and floral notes, and this coffee captures a similar essence, with hints of Japanese herbs enhancing its multifaceted profile.

The semi-washed process, particularly when using a small fermentation tank, imparts a refreshing and flamboyant flavor to this coffee. This method often enhances the complexity and sweetness of the coffee while maintaining lower acidity compared to fully washed coffees.
